Bring the joy of Albert’s Baking Co. signature cookies into your own kitchen with this Gluten-Free Sugar Cookie Mix. Created and tested by Stephanie H. in her dedicated gluten-free home bakery, this mix bakes up soft, buttery cookies with crisp edges — perfect for rolling, cutting, and decorating for any occasion.
No chilling needed — just mix, roll, cut, and bake!
You’ll need:
🥚 1 egg (50 g)
🧈 ½ cup butter (room temperature, cubed)
🍦 1 tsp vanilla (or your favourite extract)
Instructions:
- Preheat oven to 350°F.
- Add mix to a bowl and use a paddle attachment or mix by hand.
- Blend in butter until the mixture looks sandy.
- Add egg and vanilla; mix until a soft dough forms.
- Roll to ¼ inch thick (use icing sugar or parchment to prevent sticking).
- Cut into shapes and bake on a parchment-lined tray for 10–12 minutes, until edges are lightly golden.
- Cool on the tray for 10 minutes, then transfer to a rack.
Store in an airtight container for up to 7–10 days or freeze for up to 3 months.
Makes approximately 12+ cookies.
